Acorn Squash Detox Soup

Acorn squash detox soup is so refreshing! I was given two newly harvested acorn squashes the other day. Late summer, early autumn is generally the season for this tasty, wholesome and healthy vegetable. Acorn squash is known to be fat free, cholesterol free and sodium free. Also it is a good source of Vitamin C.

I decided to roast the squashes first.. First cut them lengthwise and removed the seeds. Then drizzled some extra virgin olive oil and roasted for about 90 minutes.

The household members devoured one of them immediately after it was removed from the oven while it was still warm. We put some honey and walnuts on the wedges, then spooned the delicious stuff out!

I cooled down the other roasted squash and scraped the inside of it into a bowl. I realized that I scraped it a little too deep. There were some hard fiber got scraped as well. So I decided to press it through a strainer. After the filtering process, the end product was a delicious orange puree. I wasn’t sure what to do with it meaning; keeping it for later consumption as is, or make a pie out of it, or make a soup, or what.. I decided to go for a detox soup.

Recipe for my acorn squash detox soup:

First I sautéed a medium size sweet onion. Then added one table spoon chopped fresh ginger. To this mixture I added the squash puree and squeezed one lemon generously. I added no salt. I added no pepper, either. Remember! It is supposed to be a detox food! Onion, ginger and lemon juice will do the magic to give it an unexpected taste.

The mixture turned into a deliciously seasoned pure. One could add some broth or water to dilute it.  But I kept it in puree form, which had a texture of mashed potatoes.

After roasting, the squash turned into a scrumptious detox food in less than 15 minutes.. One may hesitate to call it soup since it is a bit too tick.. Whatever it is, it’s definitely great tasting puree! It is an awesome food after exercise for it refreshes immediately!
